Tomatoes are one of the earliest crops to offer us the gift of glut! Dealing with gluts is an essential skill for anyone aiming for self sufficiency, as preserving the abundance during times of feast is core to providing for ourselves during times of famine. Today we are talking specifically about tomato gluts and how to preserve excess yields. Tomato harvest season is either here, or just around the corner, depending on where you are and how you grow, and tomatoes make up a huge portion of many modern diets, I don’t know anyone who grows food that doesn’t grow them.
